Russian Gingerbread Cookies (D, TNT)

1/3 cup sweet butter
1/2 cup honey
1 large egg
1/4 teaspoon baking soda
1/4 teaspoon ground cardamom
1/4 teaspoon ginger
1/4 teaspoon cinnamon
1 tablespoon crushed blanched almonds
2 cups all-purpose flour
1/2 cup seedless raspberry jam
sifted powdered sugar

Preheat your oven to 350°F.

Place the sweet butter and honey in a large mixing bowl and cream. Add a large egg and beat until well-mixed. Add the baking soda, cardamom, ginger, cinnamon and crushed blanched almonds and mix well. Slowly stir in the all-purpose flour.

Roll marble-sized pieces of the cookie dough with your hands. Flatten cookie dough ball on a floured surface. Spread raspberry jam on half of the cookies. Then, cover each one with a plain cookie. Seal the edges with your fingertips or even a fork, so that the jam does not leak out while the cookies are baking.

Place the cookies on a greased baking sheet and bake them at 350 degrees for 15-20 minutes. When the cookies have cooled, sprinkle powdered sugar over them
