Red Gravy's Caramel Apple Ice Cream

2 medium apples, peeled and small diced
2T butter
2T sugar

Saute about 15 minutes till apples are soft. Set aside to cool

Ice cream base
1.5 C sugar
1 C milk
2C heavy cream
2 eggs
1t vanilla

Beat eggs till light and fluffy. Set aside. In a large saucepan, melt the sugar till golden brown. Remove from the heat and add milk. It'll splatter and harden the sugar, not to worry. Return to medium heat and simmer and stir till the sugar desolves. Add the cream and stir to incorporate. Temper the eggs by adding some of the warm milk/cream to the eggs. Slowly add the egg mixture to the cream mixture, stirring constantly till it coats the back of the spoon. Add vanilla.

Chill till cool.

Add custard to ice cream maker and mix for about 25 minutes. Add cooled apples during the last 5 minutes.

Remove from machine and freeze.
