Raspberry Jam (from green tomatoes)

This is a recipe my grandmother used to make when she would have alot of green tomatoes left in the garden. I don't know where she got the recipe. The first time I helped her make this I thought she had lost her mind. LOL

5 cups ground green tomatoes
4 cups sugar
1 six ounce box raspberry flavored gelatin

Use a blender or meat grinder to grind the tomatoes after removing the stem scar. In a 4-quart kettle, combine the tomatoes and sugar, stir over high heat until mixture boils. Continue to cook over medium heat at a slow boil for 15 minutes.
Add gelatin and stir until dissolved. Ladle into jars and cover. Store in the refrigerator or freeze. Makes 8 eight-ounce jars.

You can also make this using red tomatoes too. There is more tomato flavor with the ripe ones but it's still good.

5 cups peeled and chopped tomatoes (about 4 lbs.)
4 cups sugar
1 T. lemon juice
1 six ounce package raspberry-flavored gelatin

In a large kettle, combine the tomatoes, sugar and lemon juice. Stir over high heat until mixture comes to a boil. Reduce heat and simmer, uncovered for 15 minutes.

Remove from heat and stir in gelatin. Make certain it is completely dissolved. Pour into freezer containers and cover. Store in refrigerator or freezer. Makes 8 half-pint jars.
 
I love your comment! A lot of dessert recipes were made by thinking of what to do with bumper crops. I think that was how this recipe was born.
Think carrot cake, zucchini bread, chocolate sauerkraut cake, chocolate beet cake etc.
