Pickled Carrots and Daikon Radish and Red Cabbage

I love to put picked daikon and carrot strings into a variety of Asian dishes; Bahn mi's, lotus bao buns, noodle dishes, etc. They are easy go-to dishes when I don't want to turn on the oven. But I've been out of pickles for a while now.

I also love pickled red onions in a lot of dishes. So today I spent the day in the kitchen.
