Peeled Garlic?

If I'm shaving the toes, I do it while they are frozen ; but it only takes a few minutes for them to thaw, if I'm gonna chop them..
I also keep the minced stuff in the fridge.

Got some. $2.99 at the Asian market.

These are great!

I stopped getting them, though, because by the time I got to the bottom layer, they molded.

Try putting them into olive oil and keep in the refrigerator. That will preserve them and you get the added benefit of garlic flavored olive oil. You don't have to put the whole jar in the oil, just what you think might spoil.

Got to be careful with that. In oil, you produce an anaerobic environment which is prime ground for Botulism. We re-did our kitchen a few years back and had some shelves to fill with fru-fru stuff, so we got bottles from Pier 1 and stuffed them with garlic, fresh herbs, and oil. Within a month, it got cloudy and I opened the bottle to smell it. OMG! Horrible. Turns out it was fresh made botulism.

I avoid pre peeled garlic like the plague. A couple years ago DW, Carmen, and I put up around 120 quarts of pickles. We always add one garlic clove per and because we were doing so many I bought a jar of pre peels from Sam's. We lost the entire effort. Since that awful experience we use nothing but fresh garlic that we peel and haven't had a problem.

Oh Man! I hate to hear things like that. All that work down the drain. I don't like the garlic in the jar either. I tried a small jar once to see how I liked it. I didn't and tossed it.
