Oatmeal-ChocChip-Cashew . . . Sin #8

this is a take off on my oatmeal-raisin cookie recipe.

it qualifies as sinfully good....

cream together
1 stick + 6 tbsp butter (170g)
0.75 c / 150 g light brown sugar
0.5 c / 100 g granulated sugar

add two eggs
add 1 tsp vanilla extract

combine & blend
3 c. / 240g oatmeal
180g KA_AP
1 tsp baking soda (2g)
1 tsp cinnamon (3.5g)
0.5 tsp salt


add 160g semi sweet choc chips
add 90g chopped cashews

(mix as little as possible to avoid breaking up nuts)


small soup spoonful onto baking sheet
adjusted to 18 mins @ 340'F / 115C'

says ungreased baking sheet, but bare aluminum sheets need an oil wipe.
very soft when hot - try parchment paper vs. oiled sheet for easy of removal to cooling.

Those look and sound terrific, Chowder - I'd like to make some!

What are the equivalents for the flour, the chocolate bits and the nuts?

choc chips are 175 g / cup - so smidge over a cup
the cashew volume changes with chop - unchopped about 5/8 cup
KA says the AP runs 120g/cup, so 1.5 cups.

go easy with the flour - if you use too much the batter is way too stiff
I'd reserve half the flour until the final mix, adding & checking batter as you go.
