I'm thinking that there will probably be lots of salads made for July 4th, so maybe the start date for salads could be tomorrow :hide: instead of the 5th???

Some of the stuff I have leftover from yesterday sure came in handy today!
Crunchy coleslaw with green onions, peanuts and sesame peanut butter dressing.

I had a couple of memorable salads this week. The first is a spinach & red chard salad with tofu and lemon pesto dressing. A friend of mine makes home made tofu and she prepared the basil and lemon right into it and I topped it with my favorite salad dressing. The second is a pasta salad with greek pesto; lots of fresh green beans and a pesto of parsley, oregano, basil and lemon zest.
