N'Awlins Sauce (P'o Boy Sauce)

1 cup mayonnaise
1/4 cup chili sauce
1/4 cup ketchup
1 teaspoon prepared mustard
1/2 cup vegetable oil
1 teaspoon Worcestershire sauce
1 teaspoon black pepper
2 tablespoons minced onions
2 cloves garlic -- minced
juice of 1 lemon

Add all ingredients to a jar. Cover and shake. Refrigerate overnight before using. Great with seafood and on sandwiches.
Makes about 2 cups.
 
the first time i made this sauce, I used Heinz Chili sauce and it was nice, with a nice after-burn........

Yesterday, I used 1 heaping tsp. of Sriracha instead of the 1/4 c. chili sauce.................... VERY nice !
 
Since I’m, more or less, a newcomer to NCT (I know I have been around for a couple of years, but never understood how NCT worked and had not scanned a lot of the forum and read old post) I was reading several old post and getting a lot of ideas.
I came across this and it looks good. I think I will make a few changes: maybe add a little more Worcestershire sauce, grate the onion rather than just chop it, and use a lot less oil, if I use any at all. I think this would be great just spread on a saltine cracker and eaten…..
 
Yeah, I'm not picturing how the oil works with this either, LA.

Lucky, does it emulsify or something? Is it runny, more like salad dressing?

Wow ! haven't made this in a while............ but as usual, I have photos to remind me.............
I'm not sure what the oil brings to it.........when its first assembled, it is kinda runny.........



After an overnighter in the fridge, it has the consistency of French or 1000 Island Dressing........
