Monday, Sept 12--Supper?

Well this was my first try at pork saltimbocca and everyone liked it.

Pork saltimbocca (boneless pork loin pounded thin, prosciutto, Swiss cheese, my AP seasoning, poultry seasoning rolled jelly roll fashion and secured with toothpicks then pan fried in butter), pan gravy (dry white wine, chicken stock, butter and flour), mash red potatoes (red potatoes in jackets, sour cream, butter, sea salt, ground peppercorns and dry chives), fresh steamed green beans and sliced mushroom caps sautéed in butter and sliced almonds.

went to El Camino Real on 2nd st with a good friend, had a tasty brisket sandwich on TX Toast. Nice night here for a BBQ dinner outside. The busty blonde and her friend sitting next to us went all giddy over some firemen who had their truck parked across the street, they got the "tour" took pictures, it was funny. Girls just cant help themselves around firemen and these guys were totally flirting it up even made an extra pass around The Piazza and blew the horn. For some reason this made my night. I gotta get me a firetruck LOL! Think I can find one on ebay?

I have only ever had veal saltimbocca but figured pork would taste good also. I googled recipes and found ones for chicken and veal but no pork. I took inspiration from 3 recipes and mixed and matched till I got this. I have no idea if others use pork but it was good.

I found one .... I used it for a while, and it didn't work for me... Maybe you will have better luck?

Jimmy, that looks great!

Hey Guts (when you get here lol)- I used very finely chopped smoked almonds too, and added some minced garlic to the oil along with the cilantro.
Also used green onions and red sliced.
Squeezed the juice of half a lime on the rice before tossing it all together.
Omg.. I loved it!!

sass. I'm glad you liked it. Addition of garlic. I had thought about also for some reason I thought it was in the recipe but it wasn't next time I may try a little sauté garlic. Looks like you substituted red onion for shallots or did you just garnish with them. Anyway I'm glad you liked it when I get a chance I'll post the recipe under the right section and link your report there too, if it's all right with you.
