Monday, Sept 12--Supper?

Hey All!! whats for supper???
thinking pan fried cutlets, buttered noodles, along with a sauce of chunky mushrooms, onions, red and yellow peppers, carrots, diced tomatoes, tad wine--sauce made with smoked paprika, pepper, a touch Mrs Dash-thickened with some wondra flour......
dessert??? easy, ice cream!
 
I've got some leftover rotisserie chicken so probably some chicken noodle or chicken with rice soup....at least that's the plan now but it's early so we'll see.
 
I've a bit of chicken breast meat left from Saturday, so I am making breaded chicken strips and the Cilantro Rice that Guts posted last night.
Think it'll make a great combo.

ready to fix eggs benny for breakfast with bacon..gosh I am happy with my low carb/fat breakfasts . :D I could put hollandaise on everything.
 
I am going to try my hand at a pork saltimbocca. I have never made it before so I will keep my fingers crossed. If it is lousy I won't feel to bad about wasting $3.00 on the 1/4 lb of prosciutto (domestic but the guy gave me a taste first and it was good). Served with rice (either a rice and mushroom pilaf or saffron and mushroom risotto TBD later), fresh green bean almandine and a tossed green side salad.
 
Tonight I'm planning on making "homecook's" "Mediterranean Chicken" recipe that she posted here recently. Will sub Kalamata olives for the California Black ones in her recipe, & oil-packed sun-dried tomatoes for the rehydrated dry ones. Buttered & parsleyed orzo pasta & steamed broccoli will be the sides.

Potluck night here at the cond. We've invited the condo folks from the condo next door to come over too. I have a feeling that there will be a lot of cold dishes and salads to pick and choose from. I'm doing a meat and cheese tray with some store bought pickeled veggies.
 
I have chicken soup for DW...still she is with the cold, and slight cough.

For me...uhh..Got 5 eggplants and 13 green beautiful bell peppers in the under-counter refrigerator downstairs.
I may have to give some away. But I'm thinking of the eggplant with rice some how; some way? ? ?
I'm not in the mood to slice / bread / and fry them either. It's warming up outside, and it will be too humid to cook all that.

That said...I will get out of the kitchen today cause I cant take the heat.
 
Just Fried Peppers ( Bell Peppers ) fried in a little olive oil / salt....and when browned and soft..a shake of Parm Cheese, and shredded mozzarella on top.

Served on a roll that was toasted and then brushed with olive oil and black pepper.

Mommy "T" ate it and said it was outstanding.

I had two, and there is leftover for later when I'm ready to clean and wash the pan.

Hey Guts (when you get here lol)- I used very finely chopped smoked almonds too, and added some minced garlic to the oil along with the cilantro.
Also used green onions and red sliced.
Squeezed the juice of half a lime on the rice before tossing it all together.
Omg.. I loved it!!

Sass, that rice looks so good. I'll have to try that soon - cilantro is abundantly available, as you might have expected. And Jimmy - I love the look of that sandwich with peppers and cheese. Bless you for taking such good care of your Tina.

I'm making one of my standbys - sort of a faux paella. Green and red peppers, onions, garlic, rice, chorizo, chicken, shrimp. Always good.
 
Had some butterflied pork tenderloins with mashed potatoes and sausage red gravy.

Maybe a brownie for dessert:applause:
 
Half of a charcoal-grilled Porterhouse steak with chimichurri sauce (my own fresh herbs), grilled home-grown baby eggplants (sprinkled with a little cheddar), and a small baked potato with my chives.

The Baked Potato looks awesome.

Shhhhhh.....don't tell, but I put 4 Tbs. of butter and 1/4 cup of sour cream on my baked potatoes. LO L
 
I made open-faced smoked chicken sandwiches with mashed potatoes and gravy and sauteed carrots.

The day didn't go as planned, so when it came time for dinner prep I was left scratching my head for an idea. I pulled the last pizza dough from the freezer then took the small amount of chicken leftover from yesterday and mixed it with some SBR sauce. I had leftover broccoli that had garlic butter on it, and a chunk of Provolone cheese (No Mozz in teh house). Some sweet onion sliced thin and BINGO, BBQ chicken pizza. I even sauced the dough with SBR sauce. Tasted pretty good. Wish I would have had some pineapple chunks on hand. that would have put it over the top.

Today, I looked in the reefer drawer ( the Cheese Drawer We Call It)
and I found two open bags. One was half cheese and 1/2 yellow tinge, and the other was 1/2 cheese OK, and 1/2 green mold.

I tell DD and DW...do not stick hands in the bag to pull out the cheese.
Use a clean spoon, or pour it out of the bag.
Luckily there was another bag not opened to use on my fried peppers.

That cheese stowage is my pet peeve. I hate green mozzarella.
 
Bought a George Foreman Grill today for only $1 and this is what I have cooked on it so far.

Wow...such a bargain ... Can't beat that, and it looks brand spankin new!
My son and DIL love theirs. They burnt out two already, or shall I say one, and the other the hinge broke.
