Monday, Monday--cooking? 11/7

good morning to you sunshine. :flowers:

well It could be ham :corny: but it won't be.

I have to have several more mugs of coffee & open the fridge & freezer 10 more times :fridge:

BTW I just found out why my coffee is good this morning , my sugar free carmel has 15gm of sugar alchol & really is loaded with splenda & Has 24 grms of carb per T. :bonk::shock::shock: so much for that ..

I have so many problems to deal with today I'm not sure when or what dinner will be.

I'm going to do a replay of last night's dinner oven fried chicken breasts with gravy made from the pan drippings, mashed potatoes and peas comfort food to me.

Tonight we'll be having leftover Chicken & Spinach Enchiladas from a few days ago, along with leftover refried beans & Mexican-style rice.

That does look good! Please tell us how you did your chicken.

If I get to the grocery store, I'm going to have a steak and creamed spinach (a Ruth Chris recipe that I found...looks decadent).

The same as last night. Roasted chicken with egg noodles cooked in the drippings although I may make broccoli instead of asparagus.

DW made a meat sauce and added hot and sweet Italian Sausage...

The kids are coming for dinner... (Son DIL / GD / and GD's NEW BF)
DD opted out..

I am staying clear of the U _ Organization. and just staying quiet, and playing neutral.

Well I got home after running all over creation. My pot roast is on and smells wonderful but won't be done till around 7 or 8. OR maybe we will have eggs tonight and let the pot roast cook then cool over night and reheat tomorrow like Alton does it. Then it will be easier to cut into slices. But hub like it when it falls apart into shreds. So I will let him decide. At the moment I don't even feel like eating.

I hope you get to feeling better Peepers.

I browned some thick cut pork chops and added a combination of beef consume, cream of mushroom soup and Lipton Onion Soup mix and baked them at 300° for 2 1/2 hours....they were fork tender!

Thank you Mama. I took care of a few things and I won't know for a few days if it made any difference. But I am hopeful. LOL

Your dinner looks so fantastic.

My pot roast is smelling my house up. It has been cooking for awhile now. I think I will call it done at 4 hours whether or not it shreds.

That does sound good Mama. I've done that with a pot roast but not pork chops. Next time. :chef:

What a pretty plate, Guts. It all looks delicious.

Looks wonderful, Mama. I'm getting hungry for some mashed potatoes!

Peeps, hope your roast was delish and have a relaxing evening after a hectic day.

I made surf and turf today. I took a very thick ribeye and tried to split it in half to make two thin ones. What a hack job! They looked so pathetic I had to make the shrimp to make up for the looks of the steaks. I gave my DH the pretty one. Mine was in pieces. Ugh! Never again!

Mama... That is the ultimate.
What a nice looking Chop. It really is making me hungry. Again.

We had the angelhair and the sauce with sausage that Tina made.
I had a little spaghetts...two sausages, and a salad (rare for her to make)..and lots of hot peppers and bread.

The kids enjoyed. GD came over with new BF. We all ate / burped / and sat down to digest a great meal. Gotta give the Mrs. a lot of credit. She made a fantastic sauce.

She is an excellant cook...but she cooks Italian sauce differently. More on the plain taste and no tomatoe pieces. She is a sauce and paste user; with not whole or chopped tomatoes. She learned from her Mom.

Nice Steak & Egg... Steaegg!!

The fries are cut nice. I don't like fat fries, I like them like you made them.
My wife likes them in wedges. And she smashes them with her fork before she puts ketchup. Uh! Heinz Only!..
