Hmmmm. I was also thinking about sweet Italian sausage - I have some in the freezer. Or I might make it into filling for calzones. Haven't decided quite yet.
 
I'm going to roast a couple of split chickens that the supermarket had on sale yesterday...not sure about sides yet.
 
I had a bit of boneless pork shoulder in the freezer, just trim left over from the porchetta I made a few weeks ago...not enough for a meal, though. I browned that, along with some of the Italian sausage, onion, garlic, carrots, potatoes,seasonings, and some quick soaked dried beans and stuck it all in the slow cooker. We'll see what turns out. I gotta say that it smells very promising.
 
I'm thinking about lemon chicken with artichokes over spaghetti, but I sure wish I had some scallops.
 
I made some of Lee's Baked chicken :) Yum!

It was my friend Larry's 75th birthday, so of course, I made dinner. (It was actually last Friday, but I was under the weather, so we postponed to today.)

I oven poached a side of salmon in white wine & lemon slices. Made a lemon-dill mayo to serve with it. Asparagus risotto and glazed carrots. Unfortunately, the pics were all pretty blurry. However, diner was a hit!

For dessert I made ATK's newest brownie recipe. I used milk chocolate chips instead of the bittersweet. When it was cool, I cut them into 4" circles. On each circle, was a scoop of salted caramel gelato. Vanilla whipped cream swirls all over, and it was topped with a milk chocolate caramel hot fudge sauce (like Sanders for any Michiganders.) WOW! Decadent!

It was a great birthday for Larry. Who's next?

That looks really good Dee! I love that recipe!

I had lunch today with DD's MIL. We went to Johnny Carinos. I had the Baked Cheese Tortelloni and house salad. It was awesome. I had plenty of leftovers so that's what I had for dinner and DH had leftovers from last night.

Dee your chicken looks fantastic!!

Mama we have a Carino's here also. I love the bread, EVOO and grated cheese they bring before the meal. I have had several appy's, pastas and pizza which were all good.
 
Pan fried Italian sweet sausage, green bell peppers and onions sautéed in the sausage dripping (EVOO, ground Sea Salt, Ground peppercorns, ground red pepper flakes and sliced fresh garlic) and mashed potatoes (butter, chives, ground Sea Salt, Ground peppercorns, sour cream and fat free ½ & ½).

Some serious good eats tonight! Sage, that dessert looks beyond heavenly. Your presentation is also great - how did you like the new ATK brownie recipe? I have not had good luck with my TNT Hershey's recipe lately and I'm looking for something new. Peeps, your sausage and peppers look so good, and my mouth waters every time I see your mashed potatoes. Oh yeah, that pool of butter on the spuds!

I made some soup/stew with a bit of boneless pork shoulder, some Italian sausage, cannelini beans, garbanzo beans, zucchini, carrots, potatoes, tomatoes, onions, garlic, oregano, thyme, basil, parsley, and probably some other stuff I have already forgotten about. I started it out in the slow cooker, but the beans weren't getting done, so I switched it to the stove. It was really good, garnished with some grated parm. Topped off with some home made vanilla ice cream with blackberries (used Mama's ice cream recipe). Very yummy. Poor Jerry was gazing longingly at the BlueBell Ice Cream imported from Texas at the grocery store yesterday. We decided that 150 pesos a quart (about 12-13 USD) was just ridiculous, so he was very happy when I made some this afternoon.

I had problems loading pics tonight; the server keep timing out. Could be a local problem. I did get a picture of the ice cream, but gave up on the soup.

I loved the new recipe! The work they did on balancing the saturated/unsaturated fat ratio was genius. I did swap out the bittersweet chocolate chunks for milk chocolate, since the Birthday 'Boy' really prefers milk chocolate.

And...on that day, at that room temperature, and the ingredients temp in my house, and my oven..... I found 30-35 minutes not quite long enough. I'm usually very wary of overcooking brownies, and I tend to pull them on the short side of baking. This time I left them the whole 35 minutes. Obviously, there are many variables, but I wish I had left them in just a couple minutes longer. So you might (or might not) need to adjust the timing.

But this is definitely my new go-to brownie recipe.

And you can tell Jerry that your ice cream was surely much beter than Blue Bell!!!!! It looked wonderful with the blackberries.
 
Has anyone else ever seen or tried this? I found it at Publix yesterday, and it is simply wonderful! It was $4.69 for the pint.
