This is INCREDIBLE!!

I made it with regular lemon pudding, since I couldn't find instant. Evidently, reviewers have also made it with lemon jello and lemon cake mix.

Next time I'll add lemon zest to the batter.

Spectacular! VERY moist on the inside, delicious glaze crust on the outside.

Lemon Cake to Die For
Ingredients
· A box of yellow cake mix
· A small box of instant lemon pudding mix
· ¾ c. oil
· ¾ c. water
· 4 beaten eggs
· Glaze:
· 2 c. powdered sugar
· 2 Tbsp. melted butter
· 2 Tbsp water
· ⅓ c. lemon juice
Instructions
1. Beat eggs in a bowl.
2. Add cake mix, lemon pudding, oil and water to eggs. Mix thoroughly.
3. Pour batter in a greased 9x13 pan
4. Bake for 30 to 35 minutes at 350.
5. When the cake is done, take it out of the oven and immediately use a fork to poke holes in it. Then pour the glaze over.
6. Glaze:
7. Melt butter
8. Add powdered sugar, lemon juice and water and mix with a fork.
9. Pour glaze over warm cake

That looks very similar, if not identical otherwise, to a cake my mother used to make (me too) but ours uses a box of lemon jello. It makes a really moist, light and refreshing cake, kind of like a sponge cake in texture. Nobody likes it but me though because of the lemon flavor so it's been years since I made it.
 
I've been going through my late mom's papers and found the recipe for PEO cake. I think it would fit in this thread and will cost it later.
