Leek Potato Soup

I had a large bag of leeks from the CSA taking up space in the veg drawer so found this recipe on the net. It's simmering on the hob, will not blend it, but eat it the way it is. There will be enough left for me to take to school Friday, as well.

Good Fall soup idea!

I'd like to make this, but I'll blend it. And top with bacon and chopped green onion, maybe.

I used veg broth and did add the cream.

What did you add to the recipe? It looks good but the original is white and yours is red.

I like to stick blenderize about half the chunks - scoop some out, puree, put back the chunks . . .

It's always been my experience that a veg based broth is darker than chicken stock, therefore lending a richer colour.
