Lamb shanks, crockpot

that looks good... need to start compiling crick pot recipes as i'm takin an ax to the kitchen soon

never made lamb before but I really like it

and yes I am safe from the vampires....
 
Lamb stew crockpotted with relatively cheap shoulder chops is great, too, Pancho.

As far as your meals while you renovate your kitchen: what other cooking toys do you have? Do you have a two-burner hot plate? An electric frying pan? A contact grill?

Ooooh, Pancho, I'm excited for you! When I tore out my kitchen (more crowbar than axe but I took it to the bare walls), my microwave and crockpot were to 2 things I used more than anything. Do you have a toaster oven, too?

For me, the demolition was fast and sweet but everything after that took twice as long as I thought it would. And we did everything ourselves so there was no waiting for plumbers or carpenters, etc.

I don't want to hijack this thread so I hope you'll start a thread about your kitchen project and post all the details.

Crockpot Lamb Shanks
Ingredients

  • 1 sweet onion (sliced and separated into rings)
  • 4 lamb shanks (rinsed and patted dry)
  • 1 teaspoon Worcestershire sauce (see note below to make your own)
  • 1 teaspoon kosher salt
  • Dash of freshly ground black pepper
  • 1 teaspoon olive oil
  • 10 garlic cloves (whole large ones cut in half and peeled)
  • 8 ounces mushrooms (brushed clean, large ones cut in half)
  • 1/2 cup red wine
  • 1/2 cup strong beef broth (double-strength)
  • 1 (14-ounce) can diced tomatoes (about 1 3/4 cups)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 4 sprigs fresh thyme
  • 1 teaspoon allspice (ground)
  • 1 small bay leaf (broken in half)
Put sliced onions on the bottom of the crock. Rub lamb shanks with Worcestershire and season with salt and pepper. Add a little olive oil to a hot pan and brown shanks. Place shanks in pot, then top them with whole garlic cloves and mushrooms.
In a medium bowl, mix together the wine, beef broth tomatoes and the seasonings. Pour into the crock.
Cook on low for 6 to 8 hours. Serve over egg noodles or mashed potatoes.
