Jean's Bean Dip

Some years ago, one of my foodie friends had an all-appetizer pot luck party and one of her friends, Jean, brought this bean dip. I was swooning, it was that good. I asked Jean for the recipe and she actually snail-mailed it to me.

It took me all this time to make it, and it was the hit of my 2022 Superbowl Party!

It makes a ton! Serving it is fun, since it has long, cheesy strands when hot. Excellent with any veg. or carb dipper. Even great cold stuffed into mini peppers. It's not pretty, but no one cares, LOL!


Jean’s Bean Dip

This makes a LOT, so have bring to, or invite, a lot of friends!

1 can refried beans

1 pkg (8 oz.) cream cheese

1 pint sour cream

1 small can mild green chilis

1 pkg. taco seasoning mix

Couple splashes hot sauce (I used Frank’s)

1 teas. crushed red peppers or to taste

1 pkg. shredded Monterey Jack cheese

1 pkg. shredded sharp cheddar cheese

Mix everything together except the shredded cheeses. Add half the batter into a large casserole dish. Top with the shredded cheeses. Pour on the other half of batter.

Bake at 350 degrees for 45-50 minutes.
