Irish Apple Cake

Cake:
1/2c butter at room temperature
1/2 c granulated sugar
2 room temperature eggs
3 Tbsp whole milk or cream
1 1/2 c all purpose flour
1 tsp baking powder
1 tsp cinnamon
1/8 tsp kosher salt
3 Granny Smith apples (2 if large), peeled, cored and sliced thin

Streusel Topping:
3/4 c all purpose flour
1/4 c oats
6 Tbsp softened butter
1/4 c granulated sugar
1/4 c brown sugar

Preheat oven to 350 degrees F and grease a 8 inch springform pan.
In a medium size bowl mix streusel ingredients. Cover and place in refrigerator for 30 minutes.
In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time.
Whisk together dry ingredients and fold into the butter mixture along with the cream.
Spoon batter into the prepared pan and smooth out evenly. Top with the sliced apples evenly, then add the streusel evenly over the apples.
Bake for 50-60 minutes (50 if using a dark pan) until streusel is brown and toothpick comes out clean.
Cool for 20 minutes and open the springform to continue to cool.
Sprinkle with powdered sugar or serve with vanilla ice cream.
