I need your opinion....

mama, i make 2 huge lasagnas that feed around 100 (along with oher things, of course) every year for my dept's holiday party. i've always used no bake noodles with good success. you may want to try that, to save you the step of boiling them. just be sure to put a thin layer of sauce or ricotta on them, edge to edge. and don't overfill the pan; they expand a lot. they also freeze and re-heat well, after having been baked.


also, i agree: picatta or marsala, or a little fauncier, chicken sorrentino or florentine. make the cutlets ahead of time, then all you have to do is re-heat, then make the sauce.

btw, what's a mashed potato martini bar?

You serve mashed potatoes in a martini glass along with a variety of toppings. Guests can dress up their potatoes however they want.

One of the hottest trends in food stations is the mashed potato martini bar. According to Bill Hansen, of Leading Caterers of America and Bill’s Catering of Coconut Grove, a typical mashed potato martini bar includes the following ingredients: mashed potatoes, sour cream, bacon bits, chopped chives, and shredded cheddar cheese — all served up in a classic martini glass. Some caterers vary the ingredients — replacing the sour cream with crème fraiche or replacing the bacon bits with Canadian bacon.

And to this I plan to add:

Sauteed Mushrooms
Caramelized Onions
Gravy (both chicken and beef)
Chopped Broccoli
Sauteed red and green peppers

Thanks Susan! I have a red velvet cake recipe that I like pretty well but I will make yours and the one that I have and let my DD decide which one she likes best. Do you have a really good white cake recipe?

I am going to see her monday so I thought I would take her samples of each of the cakes along with a recipe so that she can let the cake lady try some good cakes. She decorates the cakes beautifully she apparently can't bake worth a flip. :smile:
 
Also, in the cake bible by rose levy beranbaum, she has wedding cakes and a long explanation of how to make them.
