It is really good! I think next time I make this, I'll just make the full amount of batter, and split it between two loaf pans. Shorter total bake time, I think. I'll have to play it by ear.
I WILL be making this again soon. PeppA scored some overripe bananas a few days ago on the cheap. They're already mashed and frozen.
