Hamburger Vegetable Soup

1-1/2 lb. ground beef
6 cups water
3 beef-flavor bouillon cubes or 3 tsp. beef granules (I've also just added a can of beef stock)
2 cups sliced carrots
1-1/2 cups coarsely chopped onions
1-1/2 cups coarsely chopped celery
1/2 cup coarsely chopped green pepper
salt
pepper
2 bay leaves
1/4 cup catsup
28-oz can tomatoes, undrained (I use stewed tomatoes)
8 -oz. can tomato sauce

In a 5-qt. DO, brown the ground beef and drain. Mix in all the other ingredients. Bring to a boil and simmer 1-2 hours until vegetables are tender. Remove bay leaves.

I make a large batch and then freeze.
 
mmm, vegetable beef soup over mashed potatoes. Perfect for the cold weather coming up.

Oooo baby!

My mother loves soup, making it as well as eating it. We bring her to my house (she's in a nursing home) for several hours every Sunday, and this would be a great thing for her to help us make and eat some weekend this fall.

I'll have to top it with some sort of shredded melty cheese when served, making it a Cheeseburger Soup!

You're welcome Lee! It freezes well too.

I used to make it for my mom and grandmother all the time and take it to the ass't living for them.

Heyyyyyyyyyy, I made this soup this past weekend, too! It was great, Barb, and looked just like yours! Nice pics!

Wow! Looks wonderful Barb! I never thought to put it on mashed potatoes before...I'll bet that is good!
