Greek Tomato and Cucumber Salad

2 cups chopped cucumber
2 medium tomatoes cut into chunks
1/2 cup coarsely chopped green peppers
1/2 cup thinly sliced red onions
1/2 cup crumbled feta cheese
1/4 cup greek vinaigrette dressing - I use kraft brand
1/2 tsp. grated lemon peel

Toss all ingredients and serve immediately. :chef:

Serves about 4
 
If you seed the tomatoes and cukes.. it keeps it from getting toooo juicy!

Love Greek salad, come to think of it I love Greek men!!! :)
 
Oh by the way for the cucumbers I like to use the European cucumbers. They seem to taste better and don't normally have seeds.

I didn't think about seeding the tomatoes, thanks for the tip lilylove. :)

Oh and if you don't like bottled dressing just pour a little olive oil and white vinager on top.. or mix it in a jar with oregano, salt and pepper and then pour on top. Yummmmy!
 
Kalamata olives would be best, IMO.

They are black olives from Greece and are wonderful!

I forget how easy it is to make a vinaigrette. Most of the time I just use straight balsamic vinegar for a dressing but get tired of it after a while.
