Preheat oven to 350°. Line a 12 cup muffin tin with liners.
In a medium bowl, add the following:
1 1/2 c (180g if weighing) oat flour - homemade is better but store bought is fine
2 Tbsp coconut flour
2 Tbsp hemp hearts
2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp table or fine sea salt
In a large mixing bowl, add the following:
2 large room temperature eggs
1/2 c unsweetened applesauce
1/2 c neutral oil melted coconut oil or melted butter (I use a combination oil of sunflower and coconut oil, no melting required)
1/2 c of pure maple syrup or agave (Agave has a lower glycemic index)
2 grated Granny Smith apples, skin left on….about 1 1/2 cups
Combine all and mix well until smooth.
Slowly pour dry ingredients into wet. Do not overmix! Let batter rest for at least 5 minutes for the flour to absorb the wet ingredients.
Fill each muffin cup 3/4 full.
Bake in middle rack 18-20 minutes or until toothpick comes out clean. Cool on wire rack for 10 minutes then take out of tin to continue to cool.
