C ChowderMan Pizza Chef Jan 9, 2019 #3 making the ghee also drives out residual water . . . water is what does the 'butter foam' bit. not sure how that would affect eggs tho. have you tried something like safflower oil? safflower is very taste neutral - I wonder if that would be unsticky?
