Flat iron steak

I bought a 1.32lb flat iron steak...I've never had one before. Any suggestions on how to cook it so it's nice and tender?

On of my favorite steaks and you can grille it or fry it in a fry pan. It is a pretty easy steak to cook really. I sometimes marinate it with Italian dressing but most of the time simply salt and pepper. It is probably the second tenderest cut of beef there is.

We love em'-buy them all the time. I grill them and slice against the grain. Sometimes I make a "rub" (paste) consisting of Brown sugar, garlic, cumin, worcestesire sauce and uhh....(I'll have to look it up and PM you!)

Joe is right-great cut of meat!!

I have mine marinating, and we don't have enough gas for the grill. How would cook it now?

I’d heat a Cast Iron skillet till it’s really hot. Sear both sides for 2-3 minutes, then put the whole pan (steak and all) into a 400 degree oven and cook until the meat is 135. Pull, take steak out of pan, foil and rest before slicing against the grain.

Pan sear it 3-5 mins on each side and allow to rest before you cut into it. For the most tender don't cook it past med rare.

I don't have a cast iron pan....

Wow.... go garage sale-ing and see if you can find one, they are a must! I guess without a grill or CI I would pop it into the broiler for 2-3 minutes each side max.
Let us know what you did and how it turned out.

It just occured to me-I've been buying flatirons for a couple of years now, and I have never cooked one any other way than the grille!!

I do it on an electric stove most of the time in a fry pan. The times and other methods given also will work well.

I marinated it with olive oil, red wine, garlic, parsley, rosemary, chive, salt and pepper. Then I fried it in a frying pan...it was sooo yummmmmy.

I don't know if I could cook half of my recipes without a cast iron skillet. To me it is a must.
