I always thought I stayed pretty current with cookware, etc. but was really surprised when I stumbled on Fat Daddio's line of bakeware when visiting the Kitchen Shoppe in Carlisle, PA yesterday. Two things impressed me. First, they have some hard to find sizes of rectangular cake pans, such as the equivalent of a half and full sheet pan. I had been looking for a half sheet pan, with 2 inch sides to make the Hungarian cake for Jan (Recipe Here. I was even more impressed with their unique design on spring forms, round, rectangular, and square. Not only is the buckle sturdy and easy to use, the bottom of the pan is NOT flush with the bottom of the ring. This means you can take off the ring, and the baked product sits up on a pedestal, making removal easy. Also, when I make a ricotta cheese cake, it often weeps some sugar syrup. The tray would catch it and save a mess.
