Fajitas(?)/using up steak

I'm sure I didn't come up with this all on my own, as I got a lot of good advice on making fajitas here a while back, but here's what I did tonight to use up some leftover grilled steak in a fajita style dinner.

I had my veggies all lined up plus my leftover steak. The amount of steak shown was actually doubled, now I need to come up with a different lunch tomorrow :wink:.

The knife was put into use, and about 1/2 a packet of storebought Ortega fajita seasoning was sprinkled on the veggies and meat shown (minus the jalapenos) to "get acclimated", or "happy" as Emeril would say.

The big veggies cooking in some EVOO in a CI skillet over med-high heat.

After a 10-15 minutes I added the smaller jalapeno pepper.

Another 10 minutes and the steak.

Then after a few more minutes I added about 1/4c of chicken broth, turned the heat to low and put a lid on it. This is what it looked like 10 (or so) minutes later.

And plated on some corn tortillas heated on a CI griddle, with chopped cilantro added and fresh lime juice squeezed on.

The corn torts were wrapped up, but I think next time I will revert to my usual flour torts. The corn ones do not wrap as well, even heated. On the other hand, the corn tortillas packed lots more taste.

I'll make this again. It's a great use for leftover steak and really gets your tastebuds going.

Awesome!! Excellent job! I do the same thing, but instead cut the meat into long think strips against the grain. Wonderful! :clap:

(Keltin, I didn't pay attention to the grain because the steak was pretty tender and I wanted everything in bite size pieces.)
 
We call these tacos al carbon. It's my favorite way to use leftover steak!

That's why the question mark, Terry. Fajitas, tacos, burritos, wraps... It's all food in a tort shell, right? lol
 
Definitely, Chow. Different areas call them different things. When I first moved to San Antonio, I was surprised to see "soft tacos". In Houston when I was growing up, tacos were always with the crispy, corn tortilla shell. But here, there are soft or crispy tacos. Pretty much anything with a tortilla folded around it and can be eaten out of the hand is a taco. But if the tortilla is bigger and wrapped with the ends tucked in, it can also be a burrito. Very weird, huh?
 
Yes, very weird.
Just from life's experiences in the "Tex-Mex capital of NW PA" (I say sarcastically) :lol: I figure tacos have raw lettuce, burritos have refried beans and fajitas have big pieces of cooked veggies, usually peppers.
I would be so lost visiting the real world, but I would still eat good :thumb:

I believe your dinner is definitely accurately called fajitas. According to this article, Ninfa's restaurant first coined the term "Tacos al Carbon" and it was to describe fajitas!
 
We call these tacos al carbon. It's my favorite way to use leftover steak!

I love it. Lol--We do our own thing in Texas and sometimes have to explain to others. He-he......I saw the other day where someone asked what Ro-Tel was. ??????? The Tacos al Carbon look de-lish.

LOL!!! It's true - I've had to explain what Ro-tel is, too! And it seems like in every city, we call things by different names. Maybe that's cuz we've got such a big freakin' state!

I wish I could take credit for the tacos pic, but I just pulled it off the net to show that it looks just like Chow's fajitas.

Where in Texas are you, Cooksie?
 
I asked what Ro-Tel was a long time ago in Sass' Dorito casserole recipe. I had never heard of it, never seen it, and I wanted to know what it was in order to look for it. When you don't know you don't know. Then I had to ask which flavor to get...
I'll bet I'm the only one on the block with a couple cans in the pantry (lol).
