Mom and I went to this place called O'Charley's for dinner. I got the chicken Parmesan with red pepper marinara sauce. I am not a fan of marinara at all unless it is used to dip my mozzarella cheese sticks in. Let me just say it was absolutely heavenly! I ate the whole thing and there was ALOT!

I need to make this! If I don't make it soon, I am going out to dinner my myself just to get it again. Can anyone help me out with a recipe? Pretty please?

I would imagine it's a blend of roasted red peppers and marinara... And the peppers are probably put through a processor before being added to the marinara.
 
Can't help you with the recipe but O'Charleys is one of our favorite places.

The trouble with them is the closest one to us in in Lynchburg VA a couple of hundred miles south of here. :bonk:
 
Have you ever had the DiGiorno Red Pepper sauce from the refridgerated section?

Did it taste like that?
I've been googling for you but my eyes.....well....

i can find other copycats for O'Charley's but not this one....its sounds really good
 
dang it I shoulda stayed out of this one..... when I start looking to make something on my own..... I dont stop looking!

UGH! I am gonna have to go kidnap the chef and make him give me the recipe. It really is to die for!!
 
its a chain, it probably comes out of a bag or can..lol

i want to try it as well... i love roasted red pepper.... let me keep looking because i think i seen on a canadian cooking show someone making roasted red pepper marinara

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don't like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!
Ingredients:
    • 4 x red peppers, seeded and chopped
    • 1 x large onion, chopped
    • 1 x head garlic, peeled, whole cloves
    • 3 tbsp olive oil
    • 2 tbsp of fennel seeds
    • Salt and pepper
    • 1 lb. farfalle or rotini pasta, cooked and drained

Directions
  1. Preheat oven to 350°F.
  2. Place peppers, onion and garlic cloves into a 9" x 13" baking pan.
  3. Drizzle with olive oil, add fennel seed, salt and pepper and toss well.
  4. Put in oven and roast for about 45 minutes, or until very soft and caramelized.
  5. Pour vegetables into a medium saucepan and puree with an immersion blender, adding a splash of water to help it along.
  6. Check for seasoning and add salt and pepper to taste.
  7. Just prior to serving, reheat sauce in a large pot.
  8. Add hot, cooked pasta and toss well. Adjust seasoning.

when i watch hells kitchen... i like when they have the "taste the ingredients in the dish" part of a show.. Amanda is always telling me that i would win that one...

now to get my hands on some O'Charley's marinara sauce..lol

I would suggest you get a bottle of marinara sauce from Marcs, and a bottle of Rolands Fire Roasted Red Peppers ($2.75 for a 24 oz bottle) also at Marcs. Take a couple of peppers from the jar and chop them up and mix with the sauce. Simmer for about 20 minutes the give it a taste. The peppers really add another dimention to the sauce. I've been putting them on pizza as well as in my Pasta E Fagioli, and really like teh flavor.
