6 oven proof bowls
butter for greasing bowls
6 cups leftover mashed potatoes
6 eggs
salt and pepper
2 TBSP grated cheese, optional if desired

-preheat oven to 350˚
-generously grease oven proof bowls
-divide the potatoes equally between them
-use a buttered spoon to make an indent in the center of each bowl
-break and egg into each bowl
-sprinkle with salt and pepper
-place on a baking sheet and bake in the pre-heated oven for 20 minutes.
-remove from the oven and sprinkle with grated cheese if desired.

Nice recipe. Doesn't specify what grated cheese. Cheddar would be nice.

I wonder if these can be easily slipped out of the dish to serve. If so a large (6 muffinn) muffin tin could be used.

It does say to butter the bowls first, so probably.
Good idea on the muffin tin.
