Eggs Benedict for breakfast 9/19

Apparently, the birthday is going to go on all weekend! Today, by request, we had Eggs Benedict. Because of cholesterol medication, it's a special occasion only meal in our house.

It hardly needs a recipe, but.....

Toast the English Muffins. Warm the Canadian Bacon, and put a slice on each muffin half. Place a poached egg on top of each slice of bacon, then top each little stack with real hollandaise sauce.

It just doesn't get any better than this!
