Dress Knife For Steaks

It makes no difference if it's a hamburger joint or Ruth's Chris, all of their knives suck so I bring my own. My present dress knife (as opposed to EDC) is a Kershaw Leek with Sandvik 13C26 steel for the blade. It is sharpened at 15 degrees per side to maintain integrity while cutting on glass and porcelain. The final polishing stone is a 10k and the finish is stropping on a hard felt pad charged with .25 micron diamond spray.

I can imagine you get some looks.
If I can't cut a steak with the supplied cutlery, it's going back and they can try cooking me another one (lol).
 
Nice looking knife Buzz!! I'm sure it does a great job on a steak, or even port chops!!
