Dinner Tuesday 6/8/10

Paul ended up working late last night and had dinner at work...so tonight we will have the pork that we were going to have last night :)

since the truck is in the shop, i had to take the smelly bus into work today. :yuk:

so, i won't get home until around 6, at which time dw is going to the gym, probably running me over as i come through the door.

i'm hoping to get a london broil done on the grill before it goes bad, and will probably have some nuked spuds as a side.

Probably spaghetti and meatballs. The kids love it, it's easy and since the husband has ball practice tonight, easy sounds good to me. :)

Changed my mind after seeing the photos of FryBoy's Pizza Meatloaf. We are having that instead and it smells wonderful!!! :) What a great recipe!

Sautéed veggies (EVOO, fresh garlic, red pepper flakes, sea salt, ground pepper, fresh basil, sliced mushrooms, baby carrots, red, green, orange and yellow peppers, Vidalia onion, broccoli and ugly tomato). Cooked and drained linguine added and topped with fresh grated Romano and Parmesan cheeses.

Gonna do a pasta dish with fresh asparagus and fresh tomatoes.

Cooksie, I know that we are all waiting to see the results of your pancetta pasta dish. LBP - as usual, your picture is breathtaking. Looks scrumptious! I made a caldo de res tonight, using some steak that is normally sold for carne asada. Turned out very flavorful and tender after cooking an hour or so. I didn't use a recipe - it is just a chunky beef soup with lots of vegetables and I added a little bit of chipotle so it had a bit of zing to it. Jerry gave it a "9", and I agreed. Served with flour tortillas rolled up with melted cheese inside.

Oh Karen. It's rainy here tonight, and chilly. It looks like comfort food so could you bring some over?

I'll pour you some wine.....

Hey! You guys did some serious cooking tonight!

Peeps, those colorful veggies are so pretty.

Karen, that stew looks sooooooo comforting. I can just imagine, stew with a Mexican twist!

Guts! That pizza is beyond words! Perfect.

At the time we ate dinner, it was about 85F with humidity to match (85%). But Mexicans eat soup all year 'round, regardless of the heat, because if you waited until it was rainy and chilly, you'd never get to eat soup!

Can you make that a frosty margarita instead of wine?

I went to dinner with some friends - had a salad and a tempura-fried fish filet with their yummy remoulade sauce and mac 'n cheese.
