It's kinda hot here, yet again....and Lou and I are going to be huge if I keep cooking every night..

Leftovers tonight of chicken etouffe with white rice and a tossed salad.

Then it's off to Plum Street Snoballs for citrus cream sno balls. (this will be my first!!)
 
Tiny Tacos
Carne Asada (flap meat) BBQ and chopped, served in a warmed 5 inch corn tortilla (over open flame) avocado,meat,Pico de Gallo salsa toped with Queso Cotija cheeses (Named for the town of Cotija, Michoacan, where it originated, this is a sharp, crumbly goat cheese. It has been called "the Parmesan of Mexico" and is usually served over beans and salads.) And beans /note new" Taco holders" (red in color) last pic.

Guts, your dinner looks almost exactly like ours, except that I didn't cook it. We ate dinner at our favorite local taco stand. Love the queso cotija - great stuff.

Karen going to make a omelet tomorrow morning with some carne asada avocado topped with Pico de Gallo salsa topped with Queso and some fresh flour tortillas.
 
SS!! I remember ordering that at a french restaurant with my husband about 18 years ago!! It was magnificent! It instantly became a 'special occasion' meal.
