Probably a salad from someplace later this eve when I take a break at work.

Just had early brunch/lunch.. my take on Jim's Bacon Sliders :tongue:
Had some last night and thought I'd try my own at home.

dw got tied up helping out a friend last night with her kids, so i nixed the stir fry and got mexican take out.

so, tonight will be 2 stir fries. the first will be chicken ternderloins, tofu, bell peppers, celery, carrots, eggplant, baby bok choy, mung bean sprouts, green grape tomatoes, ginger, garlic, lemongrass paste, soy sauce, hoisin, and chicken stock.
the second will be the same except add thai bird and hungarian hot wax chilis, and hot sesame oil. dw and the boy only like a little heat. i like to breathe fire.

I have a chunk of leftover pot roast and some mashed taters. Wife is out of town, so I am going to experiment with a kind of hash from these.... If I remember the damn camera and it turns out edible, I'll take a picture...

There is a local that has these on the menu now, being that sliders are all the rage.
Jim's uses bacon, roma tomato, and a garlic herb mayo on smaller/rounder rolls.
I used little hawaiian rolls and a regular small vine ripe tomato, with mayo-added garlic powder and some summer savory.. close to Jim's version, and pretty damn good.

You'll likee.. just make sure you buy the sweet little hawaiian rolls, mmmmm :lol:.. purely by accident because they were all I had, but I'll use them every single time I make these now.
 
No cooking tonight - we're meeting some friends for dinner at our favorite taco restaurant, Tacos Itzel. I'll try to remember to take my camera so that I can show you the phenomenal (and cheap!) food we get there.
 
Sass, it looks like you have hit on a perfect combo: the slight sweetness of the soft bread, the crunchy, salty bacon, the tangy garlic/herb mayo, the freshness of the tomato...it doesn't get any better than this!!
 
i don't know why it struck me as funny, but are restaurant kitchens in mexico staffed by american guys, karen? lol. ;)

Oh man, I should think about this a bit to come up with a snappy answer. My first option was "Armenians."

My second option - I don't have a second option.
 
For the NCT challenge I'm making steak fajitas, mexican rice, sauteed corn with black beans.

Today's my day off so I can play with fire and do a long cook. I picked up some decent sized dino bones the other day so I might smoke those later on the Weber.
 
In fact, BT, there ARE some Americans working in Mexican restaurants here. Most of the expats in our community are, like us, retirado, or an even better Mexican term, jubilado. But there are substantial numbers of Americans and Canadians who are not yet fortunate enough to have retirement income, and who have fallen in love with Mexico. My daughter is one of them...and they work at anything they can find in order to stay here. At the risk of hijacking this thread, let me say that it is a challenge. But the restaurant we are going to tonight, like most, is family-run and staffed. More later, with pics.
 
AMAZING Sass! I can almost taste it! I don't have any Hawaiian rolls...but I do have some Sister Shuberts rolls.

I'll be grinding up the chuck roast that I was going to have last night for burgers on the grill.
 
I ground up the chuck roast and added Heinz 57 with Lea & Perrins, salt, pepper, egg and bread crumbs and made burgers for the grill. We had leftover hash brown casserole and corn on the cob.

I got a pot of kitchen sink chili going on right now.

Ground beef
chicken breast
baby bellas
pepperoni
three different type of tomatoes
three different type of onions
pink, pinto and black beans
7 different peppers
chicken stock

I'm sure I forgot something but if it goes well with chili its in there.
