These cupcakes are so moist. They are one of the few cupcakes/cakes that I really enjoy.
2 cups all purpose flour
1 3/4 cups sugar
1/2 cup Hershey's cocoa
1/2 t salt
1 T baking soda
1 egg
2/3 cup vegetable oil
1 cup buttermilk
2 T creme de cacao
1 cup hot coffee
Sift together the dry ingredients. Mix together the wet ingredients (except for coffee and creme de cacao). Combine the wet and dry ingredients. Add the the creme de cacao and coffee and mix to combine.
Pour into cupcake liners and bake at 350 for about 18 to 20 minutes. Test with a toothpick. Mine only took about 19 minutes. Makes 2 dozen cupcakes.
I don't like icing, but you could add some cream cheese frosting if you wanted. I don't even want a sprinkling of confectioner's sugar on mine, but hubby likes a little sprinkle on his.
