Creamy Zucchini Bake

Ingredients:​

  • 3 medium zucchini
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • 1 tsp. onion powder
  • 1 cup Parmesan cheese, shredded
  • 1 cup mozzarella cheese, shredded
  1. Wash and slice the zucchini into thin slices. Layer zucchini into an 8-by-5-inch pan.
  2. Melt butter in a skillet, add in minced garlic and sauté for 2 to 3 minutes. Add heavy cream, sour cream, salt, Italian seasoning and Parmesan cheese to the skillet and stir until combined.
  3. Pour sauce over the zucchini, and top with mozzarella cheese.
  4. Bake at 350 F for 20 minutes.

Mmmmm, that photo reminds me about Pattypan squash. Think I'll get some to roast.
