Patties:
24 - 32 oz ground chicken breast
1 large onion, minced
2-3 garlic cloves, minced
1 red bell pepper, minced
1 tbsp flax seed, ground
3 tbsp water
3/4 c. breadcrumbs
1 tbsp basil
salt and pepper to taste

Grind flax seeds in a coffee grinder and place in a bowl. Add water and allow to thicken.
In the meantime, add remaining ingredents to a bowl, then add the flax mixture.
Mix thoroughly and shape into patties.
Place onto a parchment lined baking sheet.
Bake at 350 for 20-30 minutes, until firm and cooked through.

Gravy:
1 (32oz) box fat free, reduced sodium chicken broth
1-2 cloves garlic, minced
4 tbsp cornstarch
salt and pepper to taste
Mix together in a saucepan then heat over medium high and bring to a boil.
Simmer until thickened.
Pour over patties.
