A friend made this easy casserole years ago and I remember loving it. I finally made it last night for a different visiting friend, but failed to read the part that said "1/2 pound of American cheese". I just put one layer of cheese slices and it turned out to be not enough.
She loved it, but I know it can be a lot better. Wasn't pretty either,
I wanted to put the recipe here - I will do this again and make it correctly!

Chicken Linda (Karen’s sister)
2-3 lbs chicken
1 can cream of chicken soup
1 can cream of mushroom soup
½ lb sliced American cheese
Stovetop stuffing
Salt and pepper to taste
Cut up chicken into bite-sized cubes. Place in a 8 x 13 baking dish. Add soups, and mix – salt and pepper.
Place a layer of cheese slices on top. Sprinkle a layer of dry Stovetop across the top.
Bake, covered, at 400 degrees for 35 to 45 mins. Uncover last 10 mins.
