Chicken In Wine Sauce

Chicken In Wine Sauce

1 lb. Angel Hair Pasta
2 lbs. Chicken breast, sliced thin in bite size pieces.
1 Green Bell Pepper diced
1 Red Bell Pepper diced
1 medium onion, yellow, white or Vidalia (can substitute green onion) diced
2-3 tomatoes diced
2-4 cloves of garlic minced (I use 4)
½ cup sliced mushrooms
¼ cup pepperoni finely diced or shredded in food processor
2 tbsp sea salt
1 tbsp fresh black pepper
3 tbsp Cajun seasoning (may use more to taste)
½ cup fresh squeezed lime juice
1 cup white wine
Olive oil for browning veggies and chicken
Chunk of parmesan cheese

Cook angel hair pasta to desired bite and set aside

Season chicken with salt pepper and Cajun seasoning

In a large skillet brown chicken in olive oil on high heat (just cook chicken in single layer so not to steam)

Deglazed pan with a little wine and pour over chicken

In large skillet starting with peppers and onions lightly brown all veggies, adding tomatoes last

Once veggies are browned added chicken and remaining ingredients cover and bring to a simmer

Serve over angel hair

Grate parmesan cheese over top

Options can be to use asparagus, broccoli, celery, carrots and even squash or zucchini in season.

I was just kidding, :whistling:I'm glad someone liked it. It is a very light and flavor filled dish. My old lady wants it for next week's menu.
 
Gonna make this again tonight. This is a tried and true recipe I love making.

I'm glad you bumped it Lefty! and I hope you remember to take pics! it sounds tasty :)

Sass, Dee this dish is so great. It is one of those pasta dishes that doesn't weigh you down at all. I get [yellow tail] Chardonnay for the wine. If I have a good heavy bread, I'll make garlic bread to suck up the juices.
 
Putting pepperoni in there is a nice touch! THAT got my attention!
