Here is a simple and budget-friendly curry recipe that you can prepare at home, and also a creamy corn salad recipe to go along with it:

Ingredients for curry:

1 lb of meat (chicken, beef, or pork)
1 onion, diced
2 cloves of garlic, minced
1 tablespoon of grated ginger
2 tablespoons of curry powder
1 can of diced tomatoes
1 can of coconut milk
1 cup of vegetables (carrots, bell peppers, or potatoes)
Salt and pepper to taste
Optional: cilantro or mint for garnish

Ingredients for creamy corn salad

3 cups of fresh corn kernels (about 4 ears of corn)
1/4 cup of mayonnaise
2 tablespoons of sour cream
2 tablespoons of chopped fresh cilantro
2 tablespoons of lime juice
1/4 teaspoon of cayenne pepper
Salt and pepper to taste

Instructions for curry:

Cut the meat into small cubes and season with salt and pepper.
In a large pot or Dutch oven, heat some oil over medium heat.
Add the onion, garlic and ginger and cook until softened.
Add the curry powder and cook for 1-2 minutes, until fragrant.
Add the meat and cook until browned.
Add the diced tomatoes, coconut milk, and vegetables.
Bring the mixture to a simmer and cook for 20-30 minutes, or until the vegetables are tender.
Taste and adjust seasoning as needed.
Garnish with cilantro or mint if desired.
Serve over rice or with naan bread.

Instructions for creamy corn salad:

In a large bowl, combine the corn kernels, mayonnaise, sour cream, cilantro, lime juice, cayenne pepper, salt, and pepper.
Mix well to combine.
Taste and adjust seasoning as needed.
Serve chilled or at room temperature.

This recipe can also be adjusted to your preference by adding more or less curry powder, or by using different types of vegetables or meat. You can also use vegetable broth instead of meat for a vegetarian option.
