Broccoli Cauliflower Ham Salad with Farro (Low Carb/Keto too!)

1 small head of fresh broccoli, cut into small florets
1 small head of cauliflower, cut into small florets
1 c diced ham
1/2 c Farro
1/2 c water or chicken/vegetable broth
1 c halved cherry or grape tomatoes
1/2 c diced red onion
6-8oz of cubed mozzarella (I use fresh)
Grated Parmesan for garnish (optional)
DRESSING
1/3 c white wine vinegar
1/2 c extra virgin olive oil
2 tsp Italian seasoning
Salt/pepper to taste

Make Farro per pkg directions and cool.
Combine all vegetables, cooled farro and ham in a large mixing bowl. Make dressing and pour over salad. Toss and mix well. Cover and chill a minimum of 2 hours. Serve!
