Bloody Mary mix – nate Shuman (posted by Johnny West)



INGREDIENTS




  • 1 quart tomato puree (Shuman uses San Marzano)
  • 1 cup dill pickle juice
  • 1 cup caper juice
  • 3 tbsp. prepared horseradish
  • 1 1/2 oz. quality soy sauce (Shuman uses Den Chan Shoyu)
  • 2 oz. Tabasco pepper sauce
  • 2 tsp. celery seed
  • 1 tsp. freshly ground black pepper
  • 1 tsp. freshly ground white pepper
  • 1 1/2 oz. Worcestershire sauce
  • 30 dashes Angostura bitters
PREPARATION

Combine all ingredients and refrigerate for 24 hours before serving.

To make a Bloody Mary, pour 2 oz. of your favorite vodka into a glass full of ice. Fill remainder with Bloody Mary mix. Add 3 dashes barbecue bitters. Mix. Dip the rim of another glass in lime juice, then into a blend of equal parts salt, celery seed, and Old Bay. Pour the mixed drink into the rimmed glass and garnish.

That reminds me of the Bloody Mary I bought at Top Golf in Las Vegas. It was GREAT. Best I've ever had.
So tried a Bloody Mary at Top Golf in Columbus OH. Sadly nothing close to the one I had in Vegas. Darn it.
 
I used to get Bloody Bulls in Iowa City. No one does them out here.

I first had them in Bermuda many years ago. They used Campbell's beef consumme. I made them once - delicious, but I never think to do it.

Well, it's been 4 years and I have yet to make Nate Shuman's recipe. But I've printed it out to remind myself to do it this winter.

I'll make 1/2 the recipe, but I don't know how many people have that much caper juice laying around. I'll make it up with pickle juice and olive juice. Can't wait!

I'd probably try the green olive juice over more dill pickle juice. Perhaps use what you have of the caper juice and top up with olive juice. But I would love to try the bloody mary!
 
I made 1/2 a batch of Nate's yesterday and chilled overnight. The only thing I had to buy was the tomato puree (Contadina's). Couldn't wait to try it tonight!

It's wonderful!!! All of the stuff blended beautifully - not one flavor stands out, but the whole is deep and delicious. It's thick, but when shaken with ice and 2 shots of vodka, is perfect!

Half batch makes about a scant 3 cups of mix.

Might be the best Bloody Mary I've ever had! Thank you, John!!
