Thanks, Jimmy. That sure looks like what I enjoyed tonight for dessert. Apparently there are multiple recipes for what some folks consider "Better than sex!"

Ha Ha Ha Ha ...I have found quite a few in my / her later years.

Bot Oh Boy...dad was right when he said just one word. ..... "Wait!"

I haven't had this cake in a long time! Thanks Jimmy for posting it! I love this cake!

I remember the name, but never tried it. It looks/sounds delish. It reminded me of a recipe my friend brought home from a Jazzercise class called The Next Best Thing To Robert Redford. LOL

I haven't had it in years. My recipe is pretty similar, all the same ingredients but made differently.

My mom made this cake...but I was absent from "63" to "69" on active duty; and so I really never got to taste it till later on in life.

My wife made it years and years later, but the first one she made she added to her notes to squeeze out the pineapple crushed a little better.
The second cake she made maybe 2 years later...and it was much better by her squeezing out more juice from the pineapple.
The cake has to be refrigerated too.

It is a awesome cake, and always went over big with the friends and family. No one had problems with devouring it.

DD made it once, and she omitted the what she calls yuckies......the walnuts and coconut.

I agree. The recipe I have you combine the crushed pineapple with cornstarch over low heat to thicken it.
