Apple Pancake Stack

Ingredients
4 tart dessert apples
25g butter
25g light brown sugar
1 tsp vanilla extract
170 g plain flour
2 tsp caster sugar
2 eggs

450 ml milk
30 g butter


1. Quarter, core, peel and chop the apples. Melt 25g butter in a saucepan over low heat.
2. Add the chopped apples, then cover and simmer until they are pureed.
3. Add the sugar and vanilla extract and stir over a low heat until all the liquid evaporates. Set aside to cool.
4. Beat the eggs and slowly add the milk and flour, beating to avoid lumps. Set aside for 20 minutes.
5. Melt the other butter in a frying pan.
6. Put 3-4 tablespoons of pancake batter in the frying pan and tilt the pan to spread the batter.
7. Lift the edge of the pancakes with a fish slice.
8. Shake the pan gently back and forth to loosen the pancake
9. When it is light brown turn the pancake (or toss it)
10. Put the pancake in the base of a round oven-proof dish.
11. Cover with a layer of apple mix.
12. Put a pancake over the apple. And repeat until you are out of pancakes.
13. Bake at Gas mark 4/180 C for 20mins.

hummmmm...sounds good, but I need the American equivalent of the metric version....duhhhhhhhhh I am so dumb--cannot convert!!

Here's a close conversion that would probably work for those of us who are metrically challenged :lol::

1 1/2 cups plain flour (All-purpose)
2 tsp caster sugar (super-fine sugar)
2 eggs

2 cups
milk
2 Tablespoons butter
