I used to see rabbit soaking in a pot of salt water at my grandmother's house when I was a wee one, but I don't remember ever staying for dinner. That looks delicious, Trim.
So.... what does rabbit taste like?
I dunno, hard to say..........it sorta favors chicken, but the consistency is more like pork loin...........doesn't TASTE like pork, just CHEWS like pork...............overall, a difficult question to answer, other than "it tastes like rabbit"
Rabbit has the mouth feel of thigh meat on a chicken. It's very moist, not at all like chicken breast. If done right, it falls right off the bone and compliments heavy sauces well, as well as light sauces.
it was to hot out to cook last night as per dw (but apparently not too hot to cut the lawn...), so we had takeout italian last night.
house salads, penne with vodka sauce and a side of meataballs for my boy, a grilled shrimp over meculun with granny smith apples and candied walnuts for dw, and a grilled garlic rib steak smothered in wild mushrooms, with a side of bacon wrapped asparagus and herb roasted potatoes for me.
I haven't eaten wild rabbit since I left the farm for Detroit in 1962, so I really don't remember....; this is my first farm-raised rabbit, and it was mentioned at table that there was no "gamey" taste at all...........
