2025 Edition - What are you baking?


Ingredients​


  • 3 medium ripe bananas
  • 2 large eggs
  • 1/4 cup pure maple syrup (or honey)
  • 1 teaspoon baking soda
  • 2 cups old-fashioned rolled oats

Instructions​

  1. Preheat oven to 350°F. Lightly grease 9×5-inch loaf pan with non-stick cooking spray and set aside.
  2. Add all ingredients to a blender, in the order listed, and blend until smooth and well combined. Pour batter into prepared loaf pan. (Garnish the top of the batter with thinly sliced banana, if desired) Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Let loaf cool completely in loaf pan. Store bread in an airtight container on the counter for 2-3 days or in the refrigerator for up to a week.
 
Need heat in here, we've got 14" of snow and it's 27 outside! so decided to try baking a total scratch monkey bread recipe. Looks great, house smells great! We'll see how the taste is. Literally came out of oven 10 minutes ago.

Taste test follow up. Good news: It tastes awesome! Bad news: It tastes awesome! This is a bit labor intense being made from scratch since it is more of a bread or roll dough than it is a biscuit dough, so a bit tedious to portion into such small pieces. But worth it!!
 
Looks like the baked oatmeal I've been having for breakfast this winter.
Lee, I reheated a portion and added a splash of vanilla Almond milk and a sprinkle of cinnamon.
It was delicious (and very filling).
 
I’m trying to find a cinnamon roll recipe to call my own. I’m using the tangzhong method . I used the recipe of the year (2021) from King Arthur. Turned out pretty good! Learning…

To be really honest, I am not a good baker. (My sister is an amazing baker.) However I ran across these little pans at Aldi's that make small 6.5 inch cakes. This makes me feel like I am using an easy bake oven or something and actually will motivate me to bake because....the cakes are cute. Plus, there is just the two of us so a small cake is ideal. With this being said, I give you a buttermilk-banana cake with golden pecan filling. I like it because it uses overripe bananas and is not overly sweet.
