I pulled some l/o chicken enchiladas from the freezer...and made a batch of rice cooker Spanish rice....OMG! Hit the comfort-food spot. We'll sleep good tonight!

So....the Killer White Chili has good flavors, but the recipe needs some work. The Black-Eyed Peas were wonderful, as usual. Ta-da. Tomorrow's dinner is already done. :ROFLMAO:

I'm guessing that it is the cherry tomatoes, yes. It is good! Maybe it was a summer TV show that showcased that recipe?

I've made Rigatoni with Summer Bolognese - we'll have some bread made earlier in the week too. Watching the World Series, will be serving soon.

I'm trying a new recipe for Sloppy Italians - basically it is a sloppy joe with Italian flavors. Nothing fancy, ground beef, store-bought spaghetti sauce and some spices and topped with a cheesy mixture of ricotta, parm, cheddar and mozzarella. We'll have them with some homemade potato chips...

P.S. I do the veggies more like the picture and less like the "finely chopped" instructions. Just a personal preference.

That's a good idea! I may do Braised Tuscan Pork Chops - the cookbook version of the recipe (identical) suggests serving with zoodles...and I do have a zuke in the fridge.

We're having apricot glazed mini chicken meatloaf and oven roasted yams/carrots/red onion. Everything is prepped and waiting to be popped in the oven.

I'm making a version of Chiang Mai Curry Noodles...and a salad with warm peanut dressing. Just sounded good.
