I made a really odd omelet that tasted really good. I had some leftover copycat Chipotle ingredients (cilantro lime rice, adobo marinated chicken, black beans) and made a 2-egg omelet with some added spinach and cheese. He ate 2/3rd of it and I ate the rest. I would do that again.

Last night we had homemade ham and bean soup. I always add a little bit of potatoes (this time red-skinned), carrots, and onion. I used 3 different types of beans. Made some southern style sweet cornbread with buttermilk. It was all yummy.

That was leftover chicken Bryan from Carrabba's, which is wood-grilled chicken breast with goat cheese and basil, topped with a sun-dried tomato lemon-butter and white wine sauce. I served it over the leftover fettuccine Alfredo and mixed in some spinach and arugula and extra fresh basil.
It did not disappoint. We had our two trio entrees with a bottle of chianti. Delicious. They also had a "buy 1 entree take 1 for $10" so we both got an extra to take. I had a $10 rewards on my loyalty account plus $95 gift certificate so the total bill was only $25 plus tip.
