Taco Tuesday here! I'm trying a new recipe for "smash tacos." Like the name implies, smashed patties that are made into a tacos. Freezer beans and rice will also be on the plates.

Donaldsons Farm Market Hackettstown, Allen Rd. / off Rt. 57 Mansfield Twp. NJ...... The best corn in the entire area. People rave over their corn. We always had great corn from their farm. I could make a meal just from corn, but now I have to watch the high carbs now that I'm a diabetic type 2.

My kitchen is still a day away from being functional. (Grout work is being done.) Again, we went out with friends to a taco place that serves Birria tacos. I had the posole roja made with Birria.

We didn't get the Tornado warning, but we got hammered at 6:30 Temp
dropped 10 degrees in ten minutes, then the Wind and driving horizontal rain for 15 or so minutes.
Then calm...

Similar, but with bleu cheese instead of feta.

Got lots of leftovers.

We are going to have Breaded and fried Eggplant. Actually, Peeps style. Peeps eggplant prep and baked is so delicious .... It's not wet and mushy, It's so delicious the way she makes it.
I just fried, and breaded 2 eggplants. All we have to do, is sauce and cheese them' and then stick them in the toaster oven to melt the cheese.

Breading:
(All according to amount of Eggplant and to taste)

Plain Bread crumbs
Garlic powder
Onion powder
Goya Adobo seasoning
Accent - Optional
Salt
Ground black pepper
Dry oregano
Dry basil
Dry parsley
Ground hot red pepper flakes (or cayenne)
Grated Pecorino Romano cheese
Grated Parmesan Reggiano cheese
(Taste crumbs and adjust seasoning to taste before using)

Flour
Eggs
Milk
Salt
Ground pepper

Oil of choice

Basic Tomato Sauce or Pizza Sauce (I used Pizza Sauce this time)
