DS, this was a serious pursuit on my part. I was asking for the best chefs in their culinary fields and not who was the most annoying. You can start that thread if you would like.
 
Cui Wuchen for most, or even perhaps all Chinese. She did state dinners for Chairmen Mao and Chou en Lai.
 
My hat is off to Georges Pralus for inventing the Sous-Vide method of cooking. I really find that fascinating.

Who wants to add to this list?

I don't know that I would include Julia Child as the grand dame of French cooking just the one that brought America's attention to it. Now that is something in and of itself. I would say Martin Yan would be the same for Asian cooking as Julia Child though not the best I'm sure. The rest I don't know enough about to comment on.
