Just make the salad as if you were making a cold macaroni salad - put anything you like in it.

1 can of peas, drained
chopped onion
mayo
salt and pepper

That's it!

I used chopped red onion and scallions. Added a little lite ranch salad dressing to just a spoonful of mayo. And some chopped fresh mint.

Cheese, chopped bacon, hard boiled eggs all would be good, too!

Lee, Andy.. I am going to make this tomorrow as a side with my dinner.

Pea salad is a summer salad around here, but it's always full of cheese chunks,bacon bits and chopped boiled egg.. good, but a little too rich and caloric.
I like the simplicity of just the 3 ingredients.
Chicken or fish will go rather nicely with it.:readytoeat::wink:
 
Well I made it, and it was very good.
A can of peas
A couple of tablespoons of mayo.
1 small chopped onion, some pepper.
Ate the whole damned bowl with Triscuits lol
